Okay. I’ve been having a craving for a BLT. So yesterday I made some homemade rolls and had myself a lovely BLT for dinner.
It was delicious.
But. . .sometimes you want more, know what I mean?
So today for brunch I made what I’m calling the “Bodacious BLT”.
Here’s how it went:
First I cut my homemade roll in half and toasted it (in butter on my cast iron).
I love toasted things.
Next I added a little mayonnaise. Okay, more than a little. Okay, quite a lot. Okay, okay, A TON!
Then I added some fresh garden lettuce and juicy tomato.
And of course some bacon. And a little leftover sauteed onions. If they hadn’t been in the fridge I wouldn’t have added them, but hey, they were there.
And then came the bodacious part; cheese! I used Havarti (because that’s what I had) but I think any cheese would work.
Finally, I grilled the whole darn thing so that cheese would get all soft and melty and yummy and gooey.
I love grilled things.
Within minutes I devoured it! I have to say it was a little messy and if I’d been in mixed company I might have eaten it demurely with knife and fork. But I was all alone so I scoffed it down with my bare hands and got all that mayo and cheese and onion and tomato juice everywhere and it was GOOD. Finger lickin’ good.
